Low-Calorie Frozen Breakfast Burritos
This batch recipe creates 20 breakfast burritos that are easily stored in the freezer! Simply pop one in the microwave in the morning and go. Full of veggies and plant-based protein, this low-calorie burrito is a great option for those looking to lose weight. Recipe inspired by breakfast burritos from the Vegan Freezer Exchange.
INGREDIENTS
1 Batch Seitan O' Greatness (or 2 blocks of extra firm tofu, pressed and diced)
2-3 TSP Minced Garlic
1 Large Yellow Onion, diced
3 Large Bell Peppers, sliced (or one bag frozen)
1 16 oz Bag Frozen Corn (or 1 can)
1 14 oz Can Diced Tomatoes, drained
2 14 oz Cans Black Beans (or ~ 1 1/2 cup dry, already soaked & cooked)
1 Cup Nutritional Yeast
1 TSP Salt
1/2 TSP Chipotle Chili Powder
1 TSP Lime Juice
20 Soft Taco Tortillas
INSTRUCTIONS
To prepare seitan, follow the Seitan O' Greatness recipe, subbing 1 TBP maple syrup for the Worcestershire sauce.
While your seitan cooks, wash and dice your peppers and onion. Heat up 1 TBP water or oil in a large skillet. Add minced garlic and onions, cook 2-3 minutes.
Toss in peppers and corn. Cover and cook until peppers are soft, ~15 minutes. Stir occasionally and keep adding water as needed so the veggies don't stick to the pan.
While those cook, cut your seitan into bite sized cubes and place in a large bowl.
Add drained diced tomatoes and cook for an additional minute, until everything is throughly combined and cooked through.
Add nutritional yeast, lime juice, and spices to the veggies and mix well. You may need to add a splash more water to help mix everything together. The nutritional yeast should form a cheesy paste that will coat the veggies.
Place cooked veggies in the bowl with the seitan and add your drained and rinsed black beans. Mix all ingredients until throughly combined.
Place one tortilla on a piece of tinfoil, add one spoonful of the filling to tortilla, and wrap like a burrito. (Wrapping them can be tricky, but the tinfoil helps keep everything together!) Repeat until you run out of filling and place finished burritos in freezer.
To reheat: unwrap burrito from foil (don't throw foil away), place on paper towel or small plate, microwave on high for 2-2:30 minutes. Rewrap in foil and enjoy!
RECIPE NOTES
Although there are no major quality issues when reheating from frozen, these do tend to come out a bit better if you let it thaw overnight. If you are reheating a thawed burrito, cut time to 1:30-2 minutes. I do not recommend storing and/or reheating in saran wrap.
